I have been making this cheese spread for some
time now; it comes from a House & Garden’s magazine, some 1980’s
December ;-)
This cheese spread is very simple, easy to pull
together … and packs a pungent kick – perfect for dull Winter
days. My garlic, horseradish, and mustard was on the hot side, so my nose was running and my eyes were burning. LOL! But it sure smelled like {YUM} ;-)
My husband liked Ritz crackers and cheese, so
that is how we used this cheese spread: it sure beats the canned cheese spreads
:-D
You can leave it in a medium bowl; or you can divide
it among smaller containers, as I have done:
Because there is only me now, I have portioned out the Cheese Spread into individual small ramekins that I sealed with plastic wrap and refrigerated. The ramekin in the forefront is twice as large as the other 4, so it is only half full ... and will be eaten with Ritz crackers tonight, while I watch Hallmark Christmas movies.
CHEESE SPREAD ~ makes 1-1/2 cups
2 Tablespoons Red Burgundy Wine * 4 Tablespoons Horseradish
* Juice of ½ Lemon * 1 Tablespoon Dijon Mustard * 3 Tablespoons Worcestershire Sauce
* 1 clove Garlic, minced * 10 – 12 ounces Cheddar Cheese (fancy or regular),
grated
Blend all ingredients thoroughly … except cheese:
Stir the mixed ingredients into the grated cheese;
stirring until all ingredients are blended smoothly …
Pack the blended mixture into serving container
of your choice:

Last night, I finished up the last of my countertop
appliances dust covers:
It doesn't fit smoothly like the others, because it was made to fit over this nice 3-pot buffet
slo-cooker/warmer that was given to us by a friend 6 years ago; and it has been
used quite a bit: each of the 3 little crockpots are perfect for 2 servings :-D
And, later tonight, I will begin burning Chanukah
candles from the last box of candles Bob and I bought together; we knew
the pretty purple and gold ones we had bought in 2017 would not be enough to get us through Chanukah
2018, so we bought this extra box of white and blue ones to finish out the 2018 celebration with. But, of course, none of the candles were used last year
because Bob was dying, and I was sitting death-watch with him at OHSU: we did
not enjoy Chanukah festivities in 2018.

I burned the last 3 of these gorgeous candles last night.
By the end of Chanukah 2019, the last remnants of
our Holiday celebrations together will have gone up in flames; and like my life
with Bob, the sentiment behind buying this particular box of candles is irreplaceable
… I can buy more candles – but I will never buy more candles with my husband
ever again.
