GOOD UNEXPECTED THINGS

I spent the afternoon with friends at Oak Point.

We’re having an Indian Summer here; so, though I actually wore shoes (sandals days are over), my top was sleeveless.

Tummy flattening out ... so glad this top fits again ðŸ˜Š And it's looking okay from the back, too.

This time of year, always makes me sleepy: I needed full-strength coffee, so I ground some pumpkin spice flavored coffee beans, and perked a pot while putting makeup on.

As I was filling my travel mug with hot fragrant joy-juice (aka coffee 😉), I got a phone call from Pam – so, I asked her if she’d like to join us: she did.

When I pulled into her driveway, she commented “Fall is in the air” … and I agreed. I also drove the long way to Oak Point – hoping some falling leaves would rain down on us as we passed through 😉

I love falling leaves. The kid in me comes to the forefront; I like to kick them up with the toe of my shoes when I’m hiking, and I like to watch them spiral downward when I drive.

The hills rang with laughter from 11 AM … to a little after 1 PM. Pam came out of her shell a bit, and she made some new friends, too – this is a good unexpected thing for her 😊

We’re all laid-back, and convo has an easy flow between all of us. I’m glad these people are in my life. I am blessed.

I dropped Pam off (and agreed to have Supper with her and her family tomorrow), and picked up the mail on my way through the Park to my carport. Looking at the medical billing from my July stupidity mishap, I was happy to note that I am benefiting from another good unexpected thing:

THANK YOU YESHUA!
‘Unexpected Good Surprises’ Blog Post:

With Fall on the air – and good unexpected things blowing my way, I got a sudden urge to cook something with molasses in it 😉

Gingersnap Cookies (recipe follows) immediately came to mind 😊

And I followed that urge up with mixing up a batch of Peanut Butter Cookies (recipe follows), too.

==Gingersnap Cookies

1 c. granulated Sugar * ¾ c. Shortening * 1 Egg * ¼ c. Molasses * 2 c. Flour * ½ tsp. Salt * 1 tsp. grnd. Cloves * 1 tsp. grnd. Ginger * 1 tsp. grnd. Cinnamon * 3 tsp. Baking Soda

Cream sugar and shortening together; add egg and molasses - blend. Sift flour, salt, cloves, ginger, cinnamon and soda together; add to creamed mixtures. Shape into small balls – roll in additional sugar.

Gingersnap cookies in the making ...
Parchment paper used to keep the cookie browning even.
I flattened each dough ball with the bottom of a tall drinking glass.

Bake in a 350-degree oven, for 8 to 10 minutes. Let stand for 1 minute before removing.

==Peanut Butter Cookies

1 c. Peanut Butter * 1 cup granulated Sugar * 1 c. Brown Sugar * 1 c. shortening * 2 c. Flour * ½ tsp. Baking Soda * 2 Eggs * 1 tsp. Vanilla extract

Place all ingredients in a large bowl – mix well. Drop from teaspoon onto a cookie sheet; press with fork tines.

Bake in a 350-degree oven, for 12 minutes.

There were 59 ct. to the recipe.

The house smells so good!

I ate a green salad with chicken pieces in it, and a few cookies. I was feeling very content with life in general. I kicked back in the recliner – found an Autumn themed movie to watch on YouTube … and got busy with a baby blanket I am designing.

Feeling fat and sassy after a sampling of both cookie recipes. LOL
MOD Baby Receiving Blanket.

Life is getting better every day.

And that is a very welcome good unexpected thing 😊
