PORK FRIED RICE

For this recipe all I can do is give a rough estimate of the ingredients because it’s an old Vietnamese recipe given to my mother in the early 1970’s passed to her by a Vietnamese woman who grew up on the stuff; and the recipe is roughly based on familial needs – such as how many people are in the family, ect.

The amount of ingredients I am posting is what I use for my family … and it makes enough for 2 meals. I have frozen the leftovers too; and haven’t noticed any significant difference in the quality of the rice or eggs on reheating and serving.

PORK FRIED RICE.

PORK FRIED RICE ~ Makes 8 servings

COOKED Rice for 3 – 3 Pork steaks – Green onions (about 1 cup) – a dozen Eggs – Salt/Pepper/Soy Sauce

Cook the rice and set aside.

In a Dutch Oven, fry the pork steak, cut into small pieces; add green onions, .sliced – cook until pork is browned and done.

Beat eggs in a bowl, as for scrambled eggs; add to the pork and onion – cook until eggs are done.


Add the cooked rice to pork mixture and season. Top with soy sauce to taste.

SHRIMP PRIMAVERA

SHRIMP PRIMAVERA ~ Makes 4 servings

1 TBSP + 1 teaspoon Olive oil – 1-1/2 cups Broccoli florets – ½ cup thinly sliced Carrot – 1 cup sliced Mushrooms – 2 Garlic cloves, minced – 1 cup Chicken Broth – 1 TBSP Cornstarch – 15 ounces shelled/deveined large Shrimp – 2 cups hot cooked Bowtie noodles – 2 TBSP grated Parmesan Cheese – 2 TBSP chopped fresh Parsley – ¼ teaspoon crushed Red Pepper flakes

Maltagliati - a nipple shaped noodles. I am using them in place of the Bowtie noodles I thought I had … but apparently did not.
These little noodles are a fairly thick.

In a large skillet, heat oil; add broccoli and carrot; cook over medium heat, stirring frequently, until carrot is tender-crisp – about 2 minutes. Stir in mushrooms and garlic – cook 1 minute longer.

Whisk in broth and cornstarch; add shrimp and cook, stirring occasionally, until shrimp begins to turn pink – about 3 minutes.

Stir-frying the shrimp.

Stir in remaining ingredients; toss to combine; and serve.

THE GOSPEL ACCORDING TO MATTHEW ~ Chapter 11

Chapter 11: When Yeshua had finished giving instructions to His 12 disciples, He went on to teach and preach in the towns around there.

Meanwhile, John had heard in prison about the work of the Christ, and now sent 2 of his disciples to ask Him, ‘Are You the coming One, or must we look for another?’ Yeshua answered them, “Go and tell John what you hear and see. The blind see, the lame walk, lepers are made clean, the deaf hear, and dead bodies are raised and the Good News is preached to the poor. Blessed in the man who does not take offense in Me.” As they were about to leave, Yeshua began to say to the crowds in regard to John, “What did you go out into the wilderness to see? A reed shaken by the wind? No? Then what did you go out to look at? A man dressed in fine clothes? Well, those in fine clothing are in the palaces of kings. Then just what did you expect to see? A prophet? Oh yes, I tell you, one who was much more than a prophet. For this is the man of whom Scripture says, ‘Attention! I am sending My messenger before you, who will prepare Your road ahead of You! (Malachi 3:1). Believe Me, no greater son of woman has ever arisen than John the Baptist, and yet the lesser ones in the kingdom of heaven are greater than he. From the days of John the Baptist until now the kingdom of heaven has been taken by force – those using force to seize it. For all the prophets and the Law kept prophesying until John. And – if you are willing to accept it – he is the Elijah who was to come. He who has ears to hear, take heed.”

“To what shall I compare the people of today? They are like children sitting in the market place calling out to their playmates, ‘we played the flute to you, but you would not dance. Then we wailed to you, but you did not play mourners.’ They say about John, a strict man who neither ate nor drank with you, ‘he is demon possessed.’ Then came the Son of man, eating like others, and they say, ‘Look! He is a glutton and a drunkard, a companion of tax-collectors and sinners.’ Well, wisdom is justified by he works.”

Then He began to reproach the cities in which most of His miracles had taken place, because they had not repented. “Woe to you, Chorazin (an ancient village in northern Galilee, two and a half miles from Capernaum on a hill above the northern shore of the Sea of Galilee)! Woe to you, Bethsaida (located on a basaltic spur north of the Sea of Galilee, near the inflow of the Jordan River into the Sea of Galilee)! For if the mighty works which have taken place in you had taken place long ago in Tyre and Sidon, they would have repented in sackcloth and ashes. I tell you this: on the Day of Judgement it will be easier for Tyre and Sidon than for you. And you, Capernaum (located on the northern shore of the Sea of Galilee), were you not exalted to heaven? You shall be brought as low as death! Even Sodom (the ancient Biblical "city of sin") would have stood on this day if the miracles that had been performed in you had been performed there. I say, therefore, that it will be easier for Sodom on the Day of Judgement than for you.”

At this time, Yeshua revealed His thoughts by saying, “Elohim, Lord of heaven and earth, I thank You for having kept these things concealed from wise and learned men, and that You have made them clear to little children. Even so, Elohim, for it was well-pleasing to You.”

“Everything has been entrusted to Me by My Father. No one knows the Son clearly except the Father, and no one understands the Father except the Son, and those to whom the Son may choose to reveal Him. Come to Me, all you who toil and are heavy laden, and I will give you rest. Fit my yoke upon you and learn from me, for I am gentle and humble-minded, and you will find rest for your souls. For My yoke fits so easily that My burden is light.”

URGENT REQUEST: I would like to ask prayer warriors to pray for our family – our neighbor’s front porch is disgustingly moldy and it’s mere feet from our car port; we have already made several emergency trips to ER for severe asthma attacks and I have talked to the Park Manager about the situation … three times now; and she is not willing to speak to our neighbor about it because she ‘doesn’t understand how we could be suffering from mold’ – she claims to ‘have driven past the mentioned house and seen nothing to be concerned about’; and ‘are you sure the mold is not in your house?’ (1) She doesn’t have to “understand” – she needs to act. Pronto. It’s a known fact that mold … especially black mold, such as is on the neighbors porch and front of her house is deadly to people with weak lungs, such as asthma sufferers (2) the mold cannot be seen from a drive by quick peek – especially from someone who refuses to think it even exists, or is a serious health problem (3) NO! There is NO mold in OUR house … we had our house thoroughly checked inside/outside/underneath for any indication of black mold before we moved in (4) and lastly: Park Bylaws STATE clearly that homes are to be maintained; meaning NO mold, up to date roofing, and painted every 10 years – the next door house is failing ALL mentioned areas of Park Rules. It appears to me that the Park Manager is actually afraid of this woman and does not want to speak to her at all about the situation. Please pray that this situation is taken care of and that we do not have to make another flying trips to ER because the Park Manager will not behave like a Manager and do her job. We are newbies to the Park and don’t want to make waves, but we do not want to be held hostage in our home either because of stubborn rebellion (neighbor’s part) and fearful attitudes (Park Manager’s part). We need to get into our car that is right next to this disgusting mess that attacks our lungs. Thank you. Logan Paul Controversy

First, let me state that I do not know this person.

I have never listened to his vlog videos; I have never seen him in TV. I have absolutely NO idea who the heck he is.

But I did see his name pop up in an internet article title while scrolling through ToyLabTV videos online … and given the title, my curiosity was aroused.

What a disappointment after all the sensationalized media hysteria about the LP controversy.

Secondly, so he videotaped and posted a suicide: what’s the big deal and the media hysteria all about???? There are uncountable suicides EVERY SECOND OF EVERY DAY and PEOPLE SEE THE DEAD BODIES people!

Police see them.

The ‘real victims’ (aka: those left behind by this selfish act on self, about self) see them: as in mothers, fathers, parents, spouses, children, aunts, uncles, grandparents, girlfriends, boyfriends, friends, pastors, paramedics, doctors, nurses, parole officers, social workers, co-workers … ect.; the list is endless concerning WHO SEES THEM.

School children arriving at school early mornings see them when they take place on school grounds – as has happened here locally twice. With the up-rise in early-prison-release-programs and the shuffling of homeless population from city to suburban areas, more and more people will see them.

Joggers and loggers see them when they come across them as they go about their daily activities.

That said, the video being denounced and shamed concerns A PUBLIC SUICIDE FOREST in Japan, where suicide apparently is a common-place happening.

My question is: WHY ALL THE PUBLIC HYSTERIA concerning a public happening?

Why is an apology demanded?

What is the real deal here?

Thirdly, people who commit public suicide do it for notoriety. They want to have their deaths recorded, argued, and talked about forever! THAT IS WHY they do it. Yes, it is a mental illness: a mental illness called narcissism – the religion of self.

Suicidal people WANT their deaths to be seen … that is the whole purpose of a public suicide. That is the REASON FOR SUICIDAL ACT in the first place.

Fourthly, if anyone should be apologizing to anyone, it should be the suicidal people who force their selfish acts on the public out of a misguided and selfish act generated to get the attention they felt was lacking while they were alive – as well as those who create designated places to commit self-murder. WHAT kind of lunacy thinks that is acceptable behavior?

I do not feel sorry for suicidal people.

And I do not feel that their families need to be apologized to for their child’s/spouses selfish behavior that led them to the final outcome.

Fifthly, I agree that the world has gone insane and become self-absorbed. But not the way the media portrays insanity or self-absorption. The world, in MHO, has gone insane in that they expect rational people to celebrate the behaviors of the mental ill – such as homosexuals and suicidal WHILE they demand apologies when the behavior is acknowledged. THAT is insane.

And THAT insane double-minded-mindset is exactly what is behind mental illness.

Which explains why the world has officially gone insane.

Logan Paul is not the problem: society bent to a twisted and perverse bent is the problem; and until that is rectified insane behaviors will continue to draw crowds … which is exactly what the insane WANT. So why the hypocritical outcry concerning a person (or persons, as is the case here) who wanted notoriety concerning their selfish and murderous act?

The very fact that this ‘suicide forest’ is plainly VISIBLE to anyone with eyes, denounces the media outcry as purely hypocritical.

No media outcries for apologies demanded should be given – THAT just gives more credence to THE really unconscionable act, which is suicide … and to a designated place to commit that heinous act.

No one has the right to murder themselves – no one. They did not create themselves, and they did not live for themselves; regardless of what they thought … or obviously did NOT think. Suicide deserves NO PITY at all. It is a purely selfish act done by a purely selfish person.

POT ROAST OF BEEF w-CRANBERRY SAUCE

I wanted to cook a fancy beef roast for my birthday supper (Hubs like meat meals and I wanted festivity), but the freezer was short on that particular item (aka: NO roasts left), so I grabbed a large chuck steak and used that instead and cut back on the cooking time. I also, as usual, used my crockpot because I ruin meat any other way. No joke. I have been cooking for 43 years and STILL cannot serve a decent meat meal from the cook range top or from the oven. If my family is going to eat a palatable meal, it has got to be cooked either in my crockpots (I have 1 for every size required; LOL), or from my electric skillet.

And I really do not have time to spend in the kitchen all day long: I am a busy woman with my crafting and teaching our little prince. Lately the crafting has fallen by the wayside too, but that’s okay – babies grow up and start to pull away, so there is only a limited window of teaching opportunities available before they begin to glean lessons from others; but the yarn will always be around later on ;-) Right now, baby boy is wanting to learn and this ‘gamma’ is willing, so he takes precedence over everything and everyone at the moment.

Anyway, getting back to this recipe … it is G.O.O.D!

POT ROAST OF BEEF w-CRANBERRY SAUCE – Serves 8-10

5 pounds chuck beef, boned & rolled (or bottom round roast) – 4 Tablespoons fat (I used bacon drippings saved) – 2 cups homemade Cranberry sauce (or 1 canned) – 3 cloves (or 1/8 teaspoon ground cloves) – 1 onion, chopped – 1 cup water – Sat & ground Black Pepper – 4 – 6 Tablespoons flour – 4 Tablespoons butter

In a large Dutch Oven pot, melt the fat and sear the beef on all sides. Add cranberry sauce, cloves, onion, water, and salt & pepper. Combine flour and butter and add to pot. Simmer covered for 3 hours (or until beef is tender). 

Pour off liquid, cook down until it thickens. If not rich enough, add a little extra butter.

CROCKPOT VERSION: In a large skillet, melt the fat and sear the beef on all sides. Set aside.

Place in crockpot: cranberry sauce, cloves, onion, water, and salt & pepper. Combine flour and butter and add to pot. Cook on LOW for about 5 hours (or until beef is tender).

COUNTRY PORK RIBS w-HERBS

Well … there were no more pork roasts to be had from our freezer when I went to get one to thaw. So I had to improvise. I grabbed the country-style ribs and prayed the jury-rigged-meal would suffice.

It did, and I will be substituting the ribs for roast off and on for this recipe in the future ;-)

The original recipe is actually, “Roast of Pork w-herbs”, and THAT is what I will be posting … but as I did, you too can substitute the country-style ribs and the effect is just as good. This is a stand-by recipe for me and we really enjoy it.

If you are only a couple as we are, just half the recipe; it works just as well.

This recipe smells heavenly as it cooks. It’s a perfect Winter meal dish where the sense need to be woke up in all the dreary weather.

PORK OF ROAST w-HERBS – Serves 8 – 10

1 loin of Pork, 8 – 10 pounds (or Country-style Pork Ribs) – 2 Tablespoons Butter – 1 teaspoon EACH Salt & ground Black Pepper – 1 Tablespoon granulated white Sugar – ½ cup Flour – 2 cups Beef broth – 1 cup Cider – 1 clove Garlic, minced – 1 teaspoon crushed Rosemary – 1 teaspoon chopped Basil, 1 teaspoon Nutmeg – 1 teaspoon Ginger – 1 cup heavy cream

Combine the butter, salt, pepper, and sugar; rub meat with the mixture. Sprinkle with flour and put into a moderate 350-degree oven. Cook 30 minutes. Then baste with mixture made of broth, cider, herbs, and spices together for 5 minutes. Cook an additional 3 to 3-1/2 hours. (See now why I almost always exclusively use my crockpots?)

Add cream to pan gravy and serve hot, but do not boil as this would curdle the cream.

CROCKPOT VERSION: Dredge meat with flour and sear in butter hot skillet. Place meat in crockpot; pour broth and cider over. Add salt, pepper, sugar, herbs, and spices.

Country-Style Pork Ribs in crockpot. I left off the flour this time too … and just added the butter to the crockpot with everything else.

Cook on LOW 6 hours.

BRUNSWICK STEW

I love chicken and could eat it almost exclusively. This yummy stew is delish! And cooks in no time at all ;-)

As usual, I cooked it in my small sized crockpot because I was busy all day and couldn’t … and didn’t want to  … spend time hunched over the kitchen stove slaving away. LOL

While this meal cooked, I worked on finishing our little prince’s home education curriculum. I have themed the Units around farm and forest animals with my own concocted and printed cute little animal stories (https://jeastofeden.blogspot.com/2017/07/mod-booklets-for-my-little-prince.html) with added hands-on activities, worksheets (not too many, but gotta have ‘em if mama is going to put him back into public school at some point: I wish she wouldn’t, but she will), and field-trip adventure ideas that fit the stories I wrote for him.

It rained and poured here all day long and this meal was refreshing and revitalizing, the smell wafting from the kitchen area stimulated our senses and kept us awake during the sleep-inducing deluge; and the eating of the meal stimulated our taste buds, picking up where the aroma left off :-D

BRUNSWICK STEW – Makes 2 servings

1 teaspoon Butter – ¼ cup chopped  Onions -12 ounces Chicken breasts, skinned & cut into chunky pieces – 1 teaspoon Worcestershire Sauce – 1 teaspoon powdered Mustard – 1/8 teaspoon Cayenne – ¼ canned Italian Tomatoes – ¼ cup hot Water – 3 ounces potatoes, cut – ¼ cup fresh or canned Green beans – 1/8 teaspoon EACH: Salt & ground Black Pepper

In a medium skillet, heat butter until bubbly and hot; add onion and saute until soft. Add chicken and brown well on all sides. Set aside.

Brunswick Stew. Searing the meat.

Place into crockpot: Worcestershire sauce, mustard, red pepper, tomatoes, water, potatoes, salt & pepper. Add chicken and onions. Cook on low for about 4 – 5 hours (or until potatoes are fork-tender); THEN ADD green beans and steam until hot (maybe 10 minutes or so).

Variation: Substitute green beans for frozen baby lima beans and cook with meal; OR use whole-kernel corn for potatoes & green beans.
