This recipe is a drop style cookie, and I use
an ice cream scoop to drop my dough onto the cookie sheet ;-)
The house will smell like wholesome goodness
while these cookies are baking :-D These cookies are very yummy … and the dough
smells wonderful while you are mixing it too!
All around, these cookies are a winner: hands
down.
OATMEAL-RAISIN-COCONUT COOKIES ~ 4 dozen cookies (a little
less yield if using an ice cream scoop to drop dough)
2 c Raisins * 1 c Water * 1 c Shortening * 2
c Sugar * 3 Eggs * 4 c Flour * 2 tsp. Salt * 1 tsp Soda * ¼ tsp. Nutmeg * 1-1/2
tsp. Cinnamon * ¼ tsp. Allspice * 2 c old-fashioned Oatmeal * 1 tsp. Vanilla * ½
c Nuts (any kind you prefer; or a blend
of several) * ½ c Coconut
Combine raisins and water in saucepan; boil
for 5 minutes. Let cool.
Cream shortening and sugar together. Add
eggs; mix well.
Sift flour, salt, soda and spice together –
add to shortening mixture. Add oatmeal.
Add raisins and juice.
Stir in vanilla, nuts & coconut; mix
well.
Drop by teaspoonfuls onto cookie sheet. Bake
at 350-degrees for 6 to 8 minutes (13
minutes if using an ice cream scoop).
