BEEF STROGANOFF Recipe


This dish is made with hamburger and rice instead of the traditional steak and noodles; but it is every bit as tasty!
                                       
And leaner … and if you use homemade beef stock instead of the canned bullion, you will cut your sodium intake as well.

We are watching Hub’s sodium intake, so he is eating smaller meals with fruits or vegies spread out through the day; here he ate a juicy red pear with the beef stroganoff. It doesn’t look like much, but it really is all he can manage at this time.


BEEF STROGANOFF ~ serves 6, about 2/3 cup beef mixture and ½ cup rice for each person

1-pound Beef hamburger * 1 Tablespoon calorie-reduced Margarine * ½ cup chopped Onion * 1 clove Garlic, minced * 3 cups sliced Mushrooms (about 8 ounces) * ¼ cup dry Red Wine * 2 Tablespoons Cornstarch * 1 cup Beef Broth * ¼ teaspoon ground Black Pepper * ¾ cup nonfat Yogurt * 2 cups hot COOKED Rice * 2 Tablespoons chopped, fresh Parsley

Heat margarine in a 10-inch skillet over medium heat. Cook onion and garlic, stirring occasionally, until onion is softened. Stir in beef and mushrooms – cook about 7 minutes, stirring occasionally, until beef is no longer pink. Stir in wine. Cover and simmer 10 minutes.

Mix cornstarch and broth; stir into beef mixture. Cook over medium-high heat, stirring occasionally, until thickened; remove from heat. Stir in pepper and yogurt – reduce heat. Cover and simmer about 30 minutes, stirring occasionally. Stir in parsley.

Serve over rice.

Altogether Hubs has lost 45 pounds during this ordeal.

And with careful menu monitoring and change of lifestyle habits, he is coming along. He is not happy with the slow progress, BUT it IS progress. And considering the fact that he was literally dying a few weeks ago ... ANY progress is a plus, as far as I am concerned :-D
